Chuck Roast – Pulled Beef

Ingredients:

1.5kg Mugavin Beef chuck roast

1 onion, diced

2 cloves garlic

1 tbsp tomato paste

1 cup beef stock

1 tsp smoked paprika

1 tsp cumin

Salt & pepper


Method:

Preheat oven to 160°C.

Season beef generously. Cut chuck into large, fist-sized chunks.

Sear on all sides in heavy pot. Remove.

Add onion and garlic, cook 5 minutes.

Stir in tomato paste and spices.

Return beef. Add stock (halfway up sides).

Cover and cook 3–3.5 hours.

Shred with forks.

Return shredded beef to cooking juices.
